It's a bold statement, I know. But seriously, this is THE best potato soup in. the. world. Do you hear me?!
Best.
soup.
in.
the.
world.
Oh, you need proof? Well, here's the proof.
I am 12 weeks pregnant. That's right, for the last 6 weeks I've been either holding my head in the toilet retching, laying on the couch trying not to, and trying to decide what I could try to eat that will stay down. And that's WITH Zofran and Phenergen in my system. I've only lost 5 pounds so far (thank heavens), and feel like there is no end in sight!
But tonight? I made this soup and ate 3 servings. It was delicious. and I'm sitting on the couch with no desire to throw up at all. It's a MIRACLE!
Without further ado:
Potato Ham Soup
taken from allrecipes
- 3 1/2 cups peeled and diced potatoes
- 1/3 cup diced celery
- 1/3 cup finely chopped onion
- 3/4 cup diced cooked ham
- 3 1/4 cups water
- 2 tablespoons chicken bouillon granules
- 1/2 teaspoon salt, or to taste
- 1 teaspoon ground white or black pepper, or to taste
- 5 tablespoons butter
- 5 tablespoons all-purpose flour
- 2 cups milk
- Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
- In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
- Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.
It's supposed to make 8 servings but after 3 of the 5 of us had seconds (or thirds), and the little boys barely ate any, we MAYBE had enough leftovers for 2.
Go make it - you won't regret it!

Whohoo! I wanted to make potato soup this week-even though it's about 100 degrees here! All I have to pick up to make your version is ham!
By the way, I feel your pain on the sickness front too. I'm 21 weeks (#2) and still on Zofran and phenergan! My first pregnancy all I kept down for the first 5 months was mashed potatoes- so I'm convinced they are the magic pregnancy food- I've never thrown them up! Thanks for the great recipe, and I hope you feel better in a couple of weeks!
Thanks! I made it tonight!
